Baru Power Balls

Ingredients

  • 1 cup baru nuts (or substitute with almonds or cashews)
  • 1 cup rolled oats
  • 1 cup pitted dates, soaked in warm water for 10 minutes and drained
  • 2 tablespoons almond butter (or peanut butter)
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon chia seeds
  • 1 tablespoon flaxseeds
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Optional add-ins: shredded coconut, cocoa powder, chopped nuts, dried fruits, or protein powder

Directions

1. Prepare the Nuts

If using whole baru nuts, pulse them in a food processor until finely chopped. For other nuts, chop manually or pulse in a food processor. Set aside.

2. Mix the Dry Ingredients

In a large mixing bowl, combine chopped nuts, rolled oats, chia seeds, flaxseeds, and a pinch of salt. Mix thoroughly.

3. Blend the Wet Ingredients

In a food processor, blend soaked dates, almond butter, honey (or maple syrup), and vanilla extract until smooth and creamy. Scrape the sides as needed.

4. Combine Wet and Dry Ingredients

Pour the blended date mixture into the bowl with the dry ingredients. Mix well using a spatula or your hands until fully combined. If the mixture feels too dry, add a little extra almond butter or honey for binding.

5. Form the Power Balls

Take small portions of the mixture and roll them into balls using your palms. Adjust the size to your preference. For added texture and flavor, roll the balls in shredded coconut, cocoa powder, or chopped nuts.

6. Chill to Set

Place the formed balls on a parchment-lined baking sheet. Refrigerate for at least 30 minutes to firm up.

7. Store and Serve

Once chilled, transfer the power balls to an airtight container. Keep them in the refrigerator for up to two weeks or in the freezer for longer storage.

Enjoy these wholesome, energy-packed Baru Power Balls anytime you need a quick snack or healthy treat!
