When we went on our recent road trip to North Carolina I made sure that we packed the best snacks for a road trip. We had plenty of fresh fruit and  cut-up vegetables as well as a few other healthy snacks. Rather than stocking up on cookies and sweets I made a batch of these no bake breakfast cookies. Theses cookies are easy to make, healthy, packed with protein and so delicious. These no bake breakfast cookies can be put together in less than five minutes and stored in the fridge for up to two weeks. I made a batch a few days before we left and stored them in our cooler during our road trip. I made them little smaller than the original recipe called for so instead of only making eight cookies I made 12 cookies.no bake breakfast cookies

No Bake Breakfast Cookies

Ingredients:

¾ cup peanut butter
1 Tbsp. real maple syrup
1 tsp. Vanilla
2 Tbsp. Chia Seeds
¾ cup old-fashioned oats
¼-1/2 cup mini chocolate chips

Directions:

Place the peanut butter, maple syrup and vanilla in a microwaveable bowl and microwave the ingredients of 20 seconds. Stir the mixture until well combined then add in the Chia Seeds, the old-fashioned oats and the mini chocolate chips. Stir well and ensure that everything is well incorporated. Roll the mixture in 8-12 balls and place the balls on a baking tray lined with parchment paper. Press the balls flat slightly and place them in the fridge for at least an hour.no bake breakfast cookies Store in an airtight container in the fridge for up to two weeks.no bake breakfast cookies
