As I mentioned last week one of the benefits of spending time with friends is enjoying their love of cooking. Last week I shared the delicious Oatmeal Pancakes our friends made for us. This week I’m sharing another wonderful recipe, Grilled Tomatoes Stuffed with Goat Cheese. It’s a perfect summer meal as the tomatoes are cooked on the grill and then served over pasta. For the best taste, use fresh heirloom tomatoes that you have grown or purchased at a local farmer’s market. I could not believe how delicious this recipe was.
Grilled Tomatoes Stuffed with Goat Cheese
½ cup soft fresh goat cheese
2 tsp. sliced scallions
1 shallot, minced
¼ tsp. salt
1 Tbsp. Fresh sage
4 medium heirloom tomatoes
Combine the goat cheese, scallions, shallot, salt and 1 Tbsp. fresh sage in a bowl. Mix well. Season with pepper, if you like. Using a small knife, remove a core shaped piece of tomato from the top of each tomato about 2” wide and 1” deep. Divide the cheese between each of the tomatoes. Grill the tomatoes for about 5 minutes.
While the tomatoes of being prepared bring a pot of water to boil and cook your pasta of choice. Time it so the pasta is done as the tomatoes come off the grill.
Divide the pasta among four shallow bowls. Place a tomato in each bowl, on top of the pasta. Serve with additional goat cheese and enjoy.
Be sure to serve the grilled tomatoes with some fresh bread to soak up all the yummy goodness. Can’t think of a more perfect summertime meal than these grilled tomatoes stuffed with goat cheese.
