Summer is the perfect time to enjoy the local vegetables either from your garden or the local Farmers Market. We enjoyed some delicious corn recently and had a few ears leftover. I decided to make this grilled corn, avocado and tomato salad to enjoy with our grilled burgers. It was so good. The salad recipe makes about four servings so I’m looking forward to enjoying the leftovers for lunch!corn, avocado, and tomato salad
