Perhaps when you think of nachos you think of oozing cheese and lots of calories, but you can enjoy nachos and not have all the fat and calories! This is a quick snack or we often eat it for dinner. If you have left overs the next days the bean–corn mixture is wonderful added to a salad!All Veggie Nachos

All-Veggie Nachos

1 (15oz) can black beans, rinsed and drained
8oz of frozen corn, thawed
2 Tbsp chopped green chilies
1 Tbsp chili powder
½ tsp ground cumin
½ cup shredded cheddar cheese
2 cups baked tortilla chips
2 cups lettuce
1 tomato, chopped
¼ cup light sour cream
¼ cup salsa

Combine the beans, corn, chilies, chili powder and cumin in a pan. Cook over medium heat stirring until hot. Add the cheese and stir until the cheese is melted.

Place the tortilla chips on a large plate.All Veggie Nachos Spoon the bean mixture over the chips. All Veggie NachosTop with lettuce, tomatoes, sour cream and salsa. Serve immediately!All Veggie Nachos
