Essential Ingredients for This Recipe:

  • 500g ground pork
  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 medium zucchini, diced
  • 1 red bell pepper, diced
  • 1 cup baby spinach, chopped
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper, to taste
  • 1 cup shredded mozzarella cheese
  • 12 manicotti pasta shells
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese (for topping)
  • Fresh parsley, chopped (optional, for garnish)

Directions

Prepare the Filling:

In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sautéing for 2-3 minutes until softened and fragrant. Add ground pork, cooking until browned while breaking it into small pieces with a spoon.

Add Vegetables:

Mix in diced zucchini and red bell pepper, cooking for 5-7 minutes until the vegetables are tender. Stir in chopped spinach, dried oregano, dried basil, salt, and pepper. Cook for another 2-3 minutes until the spinach wilts and the flavors meld together. Remove from heat and let the filling cool slightly.

Cook the Manicotti Shells:

Cook manicotti pasta shells according to package directions until al dente. Drain and rinse under cold water to stop the cooking process, then set aside.

Preheat the Oven:

Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with cooking spray or olive oil to prevent sticking.

Prepare the Manicotti Shells: Use a spoon or piping bag to carefully fill each cooked manicotti shell with the savory pork and vegetable mixture, ensuring even filling. Arrange the filled shells in a single layer in the prepared baking dish.

Add Sauce and Cheese: Generously pour marinara sauce over the manicotti shells, ensuring they are evenly coated. Sprinkle shredded mozzarella cheese across the top for a creamy, melted finish.

Bake to Perfection: Cover the dish with aluminum foil and bake in a preheated oven for 25-30 minutes, until the cheese is melted and the dish is heated through.

Finish and Garnish: Remove the foil and bake uncovered for an additional 10-15 minutes, until the cheese is golden brown and the edges are slightly crispy. For a fresh touch, garnish with chopped parsley, if desired.

Serve and Savor: Enjoy the Pork Veggie Manicotti hot from the oven, paired with a crisp side salad or warm garlic bread for a complete, hearty meal. Buon appetito!
