Carrot Seaweed MedleyRecently my husband and I tool part in a three-day refresh program. We just wanted to get ourselves back on track after a period of too much eating and not enough exercise. The 3-Day Refresh consists of three daily shakes, a fiber drink, plenty of water, plus a wide variety of fresh fruits, vegetables, and healthy fats throughout the day to keep your energy and metabolism going. The meal plan is simple and they give you a variety of options for delicious dinners. My favorite is the Carrot-Seaweed Medley. The recipe only makes one serving but is easily doubled or tripled depending on how many people you are feeding. I plan to make it again as a side dish. The seaweed adds a mild flavor and cooking the vegetables in sesame oil give the whole dish sort of a nutty flavor. This is a dish I will enjoy again! I found the package of dried arame seaweed on Amazon. I’m sure you have all the other ingredients on hand.

 

Carrot-Seaweed MedleyCarrot Seaweed Medley

 

Ingredients:

 

½ tsp sesame oil

¼ medium onion, cut into thin slices

½ medium carrot, cut into matchstick size pieces

¼ medium red pepper, cut into strips

2 Tbsp shelled edamame

2 Tbsp arame seaweed

¼ cup water

1 dash of Himalayan salt

1 scallion thinly sliced.

 

Directions:

 

Soak the seaweed in cool water for 5 minutes, drain and set aside.Carrot Seaweed Medley

Heat sesame oil in a large skillet over medium heat. Add the onions and cook, stirring frequently for two minutes.

Add the carrots, bell pepper, edamame, seaweed and water. Bring to a boil. Reduce the heat to maintain a gently boil; cook covered for 5-8 minutes.

Remove cover. Add salt and cook for 1 minutes. Add scallion. Mix well and serve.Carrot Seaweed Medley

Looking for a light summer dinner idea? This recipe is a perfect choice. I had some shrimp in the freezer I wanted to use up and this dinner came together in no time at all.Asian Shrimp & Rice Bowl

Asian Shrimp and Rice Bowl

1 cup quick cooking brown rice
3 Tbsp rice vinegar
2 Tbsp ponzu sauce
2 tsp sesame oil
1 ½ tsp ginger, minced
1 tsp Sriracha
1 pound of medium peeled shrimp, cooked
1 cucumber, halved lengthwise and cut into matchstick strips
2 medium carrots cut into matchstick strips
4 large radishes, sliced
1 cup of bean sprouts
½ cup cilantroAsian Shrimp & Rice Bowl

Cook the rice according to the package directions. Transfer the rice to a large bowl and let cook ten minutes.

While the rice is cooling make the dressing by combining the vinegar, ponzu sauce, sesame oil, ginger and Sriracha sauce in a small bowl.

Divide the rice between 4 shallow serving bowls. Arrange the shrimp, cucumber, carrots, radishes and bean sprouts on the rice. Drizzle evenly with the dressing and sprinkle with cilantro.Asian Shrimp & Rice Bowl Serve and enjoy! I was so excited when I heard about the new Fixate Cookbook by Autumn Calabrese.Fixate Cookbook Autumn is a celebrity fitness trainer; a busy mom and I just love her 21 Day Fix fitness program. I love the cookbook. It has over 101 mouthwatering recipes for breakfast, lunch and dinner.

The first recipe I made was Pineapple Chicken Skewers. They were delicious!Pineapple Chicken Skewers

Here are the ingredients:

1 pound of chicken breast cut into 16 one inch pieces
¼ cup reduced sodium tamari soy sauce
2 tsp sesame oil
2 tsp fresh grated ginger
1 (8oz can) pineapple chunks, drained
1 medium red pepper, cut into 16 one inch chunks
½ large red onion cut into 16 one inch chunks.

Place the chicken in a bowl and add the soy sauce, oil and ginger. Mix well and refrigerate for at least 30 minutes to marinate.

Preheat your grill. While the grill is heating place a piece of chicken, pineapple, pepper and onion onto a metal (or soaked bamboo) skewer. Repeat so that each skewer has two pieces of each ingredient. Discard the marinade that contained the chicken.

Grill the skewers for 4-5 minutes on each side or until the chicken is cooked. Serve immediately.

I don’t talk very often about my Beachbody involvement. Maybe I should? It has changed my life!

I became involved in Beachbody in February. My daughter was a coach and she was holding a 21 Day Fix Challenge group. I knew I had weight to loose and figured I could do anything for 21 days!

You may wonder what the 21 Day Fix is all about. It is not another diet, it’s about eating just the right portions, and following a simple 30-minute workout each day and enjoying a nutritious shake each day.

The simple eating plan takes you step by step through the process and makes portion control so easy you won’t even have to think about it. Instead you can just enjoy delicious, healthy food without counting points or calories! The simplicity of this program equals success. I started seeing results immediately!

The exercises vary each day and include total body cardio, upper body, lower body, Pilates and Yoga. In the four months I have been following this program I have lost over 20 pounds and a total of 19 inches! My clothes are now too big and I feel so much stronger and have so much more energy!

I really thought I had come to a time of my life where I was getting older and not exercising as much and the extra weight was just part of life. However it is never to late to change your habits and improve your life style. All you have to do is commit! The workouts have challenged me. In the beginning I would modify the exercises, there is a woman in the DVD who modifies all the workouts. I would follow her. Over time I have now been able to do the workouts without any problem. I’m still working on my pushups but it will come!Beachbody-challenge-

My husband, who has never exercised a day in his life has now joined me in my workouts. How exciting it is to see the transformation in his life! I now have a faithful workout buddy and we have such fun working out together.

Looking for a delicious healthy dinner? This is a good one. Not only does it come together quickly but it is even delicious the next day for lunch!Five Spice Pork Stir Fry

Five Spice Pork Stir Fry

2 Tbsp soy sauce
1 Tbsp honey
1 tsp cornstarch
¾ pound of pork tenderloin, cut into strips
¾ tsp five spice powder
¼ tsp salt
3 tsp olive oil
¼ pound sugar snap peas ( I used one 10z box of frozen snap peas)
1 red pepper cut into 1” pieces
1 Tbsp fresh ginger, minced
1 jalapeno pepper, seeded and minced
¾ pound fresh baby spinach
1 tsp sesame seeds, toasted

Combine the soy sauce, honey and cornstarch in a small bowl and set aside.

Sprinkle the pork with ½ tsp of the five spice powder and the salt. Heat a large skillet and add 1 tsp of the oil. Stir fry the pork until cooked through, about 4 minutes. Transfer the pork to a plate. Add the remaining oil to the skillet and add the peas, pepper, ginger, garlic, jalapeno and remaining ¼ tsp of the five-spice powder. Stir-fry until the vegetables are crisp tender. About 2 minutes. Add the pork and the soy sauce mixture and stir fry until the sauce is slightly thickened. Add the spinach and continue to cook until the spinach begins to wilt.Five Spice Pork Stir Fry

Spirulina is a type of blue-green algae that is rich in protein, vitamins, minerals, and carotenoids, antioxidants that can help protect cells from damage. Spirulina provides all nine essential amino acids, making it an excellent complete protein source! It is loaded with antioxidants, iron, and vitamins A through E.

There are many ways to incorporate spirulina into your diet. You can use it make ice cream. This recipe is made from coconut milk, cacao nibs, agave syrup and a touch of spirulina for a beautiful green vegan dessert! Try it this summer, you could even add some mint extract and make mint cacao chip ice cream.

 

Salad Dressing – use spirulina right in your salad dressing. Green up your salad! Make your favorite vinaigrette dressing and use 1 tsp of spirulina powder for each tablespoon of olive oil. If you don’t make your own salad dressings just add it to ready made dressings for an additional boost.Salad with Blueberry Basil Vinaigrette

Some folks have even added it to their favorite cookie recipe! By adding it to burritos you can give a vegan burritos an extra boost of protein. For more ideas on how to incorporate spirulina into your diet go to Nuts.com! They have a wonderful video and recipes to get you started!

 

My two favorite ways to incorporate spirulina into our diet is by adding it to smoothies and adding it to my favorite homemade salad dressing! By adding Spirulina to my smoothies I am able to enjoy my smoothie knowing I am getting a boost of superpower! Does that make me a superwoman?

 

Here is an awesome salad dressing recipe, give it an extra boost by adding 1 tsp of spirulina.

 

Springtime Salad Dressing

 

1 scallion, roughly chopped
2 cloves garlic, peeled
2 Tbsp maple syrup
4 Tbsp apple cider vinegar
1 tsp Dijon mustard
1 tsp chopped fresh chives
1 tsp chopped fresh dill
1 tsp chopped fresh parsley
½ cup oil
½ tsp salt

 

Combine all ingredients in a blender and puree until smooth. Makes ¾ cup. Might want to double this as it is delicious!Adding Spirulina

 

If you’re in the mood for a smoothie try this amazing green smoothie!

 

Amazing Green Smoothie

 

1 whole banana
½ cup mixed berries
1 Tbsp flaxseed meal
1 Tbsp Almond butter
½- 1 cup almond milk
2 cups fresh spinach
1-1 tsp Spirulina
6 ice cubes

 

Adding SpirulinaBlend everything together until creamy, add more almond milk to make it thinner. Enjoy immediately or freeze for later.Spirulina shake

 

For those of you following the 21 Day Fix this would include 3 purple containers, 3 tsp healthy oil, 2 green containers and depending on how much almond milk you used it would be ½ yellow. I split the shake with my husband!

Be warned, adding Spirulina to anything will give it a rich green color! Still tastes fine.
